Pumpkin Steel Cut Oats

I love fall, even though we live in Florida. ¬†Our clothing and leaves don’t really change but my yearning for fall color, seasons , smells and food are all about FALL right now.

What I dream fall should look like:

So how to eat yummy Fall food with this new “better” way of eating? ¬†I am on a quest to find new recipe choices and I will post along the way.

First of all my favorite smell, flavor and food during this season is pumpkin.  Pumpkin pie, pumpkin curry, pumpkin ravioli.. etc.

My first Fall recipe I will share is Pumpkin Steel Cut Oatmeal.

Pumpkin Steel Cut oats

Pumpkin Steel Cut Oatmeal

Ingredients:

1 Cup Steel cut oats (I purchased in bulk section of Whole Foods, but Quaker has them as well)

1/2 can pure pumpkin

1/4 cup half and half (or any milk, I like half and half because it gives more protein and is creamier)

1/2 tsp pumpkin pie spice

1/2 tsp cinnamon ( or just shake until you have what you want)

1-2 tsp splenda or sugar substitute

dash of salt.

Directions:

3 cups of water and 1 cup of steel cut oats with a pinch of salt to a boil
turn down to med-low and simmer for 45 minutes
If consistency is too thick or water is evaporating , add a little bit more water and stir frequently
stir in 1/2 can pure pumpkin,  pumpkin pie spice, cinnamon, sugar substitute and 1/4 cup of half and half cook until warmed.

Serve immediately

1/4 cup (1) serving

Calories: 135

Carbs:       11

Fat:              3

Protein:     5

Sodium:    10

Sugar:          4

The Real Truth

11 days until surgery

Ironically on Thursday I started my all liquid diet.
Hhhmmmmm coincidence?  I thought it was a migraine but as I continued the liquid diet for Thursday and Friday the headache got worse, I became nauseated, very dizzy and aches and pains all over my body. By Sunday I was feeling better and not as hungry.  So WHAT WAS IT? Am I allergic to the whey in the protein drinks?  Do I have the flu?   Well after going to my trusty  GOOGLE I typed in:

ahhh BINGO ¬†I think I found the culprit 1000‚Äôs of pages.. all about ‚ÄúInduction Headache‚ÄĚ, ‚ÄúAdkins Flu‚ÄĚ, Pre-Surgery Diet Heachaches‚ÄĚ. So this is something common that my Dr. never told me about.

Symptoms

The Atkins induction flu is a term used to describe the side effects sometimes experienced by Atkins dieters when they start restricting their carbohydrate intake to very low amounts. The symptoms of the Atkins induction flu include fatigue, weakness, dizziness, headaches, irritability and nausea.

Causes

There are two main causes of the side effects sometimes experienced when starting on a low-carb diet. The first is carbohydrate withdrawal. Most people are used to eating about 50 percent of their calories as carbohydrates, so drastically switching to a low-carb diet comprising less than 5 percent to 10 percent of the calories as carbohydrates is a big dietary change. If your body was used to running on carbohydrates, you might require some time to adjust. The second cause is dehydration. Low-carbohydrate diets tend to be diuretic and help you get rid of unwanted extra water in your body, but if you do not properly replenish the lost fluids and electrolytes, dehydration and the accompanying side effects can occur.

No More liquid Diets Please

I know it wasn’t the water intake because I have been crazy drinking water.  So I do believe I have diagnosed myself. I was having Carbohydrate Withdrawls!

 

Scary right?  That I have been that dependent on Carbohydrates that my body goes through withdrawal when I try to right the wrong.

Good News.. it is day 4 and I am feeling good.  However I didn’t follow my plan exactly.  This is what I am doing (as once again I am diagnosing myself and new after extensive self research I am changing my plan a bit)

 

Instead of 4 shakes a day, I am doing 3 shakes a day and a small lean protein and raw non starch veggie each evening.  Boy do I love this small 3 oz grilled chicken breast and broccoli after only shakes during the day.  I feel good, no headaches, no dizziness, feel like I am losing weight as well.  3 Days before surgery I will go back to the 100% liquid protein diet.

 I have to say, I am looking forward to no more dieting!  Because being hungry all the time STINKS!
